Chocolates, which until recently had been referred to as covertures, are the most refined group of confectionery semi-products. They are intended as coating for any chocolate articles (chocolate bars, sweets, jelly, marshmallows) and confectionery (biscuits, wafers, gingerbread), forming bars, figures and pralines.

The intended use of individual chocolate masses mostly depends on the composition of raw materials and rheological properties, in particular viscosity and the flow behaviour. A highly diversified range of chocolates offered by our company means that each manufacturer of sweets can find a suitable raw material. Flexible approach to design and thorough analysis of your needs coupled with extensive knowledge and experience of our employees will allow us to meet any requirements.

The range of our products includes bitter, plain, milk and white chocolates, in solid form. A unit packaging is a multi-layered paper sack weighing 30 kilos each. For clients having appropriate technical and warehouse facilities, we offer deliveries of chocolate in liquid form with the use of road tankers.

We are proud that, as not many entities in Poland, we manufacture chocolate from cocoa beans and we export the best selected varieties directly from Africa.

Cocoa butter

Cocoa butter is one of key ingredients of chocolate that gives this products its unique taste.

Union Chocolate has patented a new improved method of deodorisation that will be conducted within a shorter time thanks to using an innovative deodorising nozzle. This allows to save energy and obtain better properties of deodorised butter as compared to natural butter. As a result, it can be used in many areas of industry, not only in food, but also in cosmetics and pharmaceutical industrial sectors.

The offer includes both liquid and solid cocoa butter in 25 kilo blocks.

Cocoa powder

Cocoa powder is the product obtained by grinding cocoa press cake which is the cocoa mass after hydraulic pressing to reduce the fat (cocoa butter) content.

Union Chocolate offers highly and low alkalised cocoa powder with varied pH levels as well as multicoloured cocoa powder with a wide spectrum of colours from light brown, through red, to dark brown and nearly black one.

The use of cocoa powder tempering patented by Union Chocolate allows to obtain cocoa powder that is not mat, but is dry and has a much longer shelf life and more intense cocoa taste.

Alkalised cocoa mass

Cocoa mass is a smooth, uniform, dark brown mass obtained by grinding alkalised cocoa nibs. It contains no less than 53% of cocoa fat.

A raw material used for mass production are carefully selected seeds of cocoa tree from Africa, mainly the Ivory Coast. We can also produce single origin mass using cocoa beans for example from South America. In order to ensure high microbiological purity, the processing of cocoa beans includes a debacterisation stage.

Products manufactured on the basis of alkalised cocoa mass represent a higher quality than traditional cocoa mass, because it has less sour taste and does not contain the undesired tannic substances. Cocoa mass is the product obtained by roasting cocoa beans.

Coating

Coatings are products that taste and look like chocolate, but are much easier to use as they do not require tempering. Apart from coatings made with the use of vegetable fats, we also offer coatings manufactured with the use of lauric fats.

In addition, we offer ice cream coatings and can manufacture coatings according to a client’s recipe.
